i am going to fit white dials to the gal but im not how to re-calabrate the clocks with vcds anybody know how to?

You don't do it with VCDS! There is a predefined stop on each one, make sure the ignition is off when you disconnect the cluster, then push the needles back on and turn then counter clockwise until you feel them go hard / resistance - job done.

You can then use VCDS (only the full version) to enter the test mode of the cluster which will put each needle in its upright position (speedo to 62mph) so you can test they are right.
