I know very little about cars but here goes.
My wife is driving a 2000 plate galaxy mk1 automatic. When she pushes up the indicator stalk to go left everything is fine the light work and there is the usual "ticking" sound, when she wants to go right the ticking sound is erratic and very random and Sonia the lights that flash on the front and back of the car. Sometimes the lights will still permanently on even when the indicator has returned to the off position. When i put the hazards on, the ticking sounds like it would normally do and the left hand side light blinks on and off as normal but the right hand light flashes erratically.
I have unplugged and checked the fuse (no 52 on the left hand side) and it looks fine. I have also (following a guide on here) made my way to the level 2 relay switch panel but i can't find either in the manual or anywhere else online what relay would control the indicators. I have followed another guide from here about changing the indicator stalk, now i didn't change the stalk but i took the covering off just to make sure they wires looked ok
I'm now at a loss of what to try next, so any help for a complete newbie would be very much appreciated
Broken wires in one of the doors or the tailgate - most likely either the tailgate, or the drivers door. There is more info on here including instructions on fixing them.
It won't be the stalk (it can't really fail in that way, it either won't switch at all, or switch when it shouldn't). The relay I think is built into the fusebox and can't be replaced seperately on the mk2, not sure on the mk1 (a 2000 plate could be either of them, does it look like the first or second picture out of the ones at the top of the page?)
Its detecting a blown bulb when it flashes rapidly - though a bad connection (possibly caused by a broken wire) will cause the same thing to happen. It can be worth switching them on and walking round the car to see if one light doesn't work either at all, or doesn't light up as well as it should, as a corroded bulb holder could also do this (it may light, but look duller than it should do).
Seems odd it flashes rapidly even on hazards as they normally donââ,¬â,,¢t do that with blown bulb when using hazards just indicators.
I would hazard (excuse the pun) a guess the Timer unit (fuse box) is at fault, always worth a check of the door and tailgate wiring though with any leccy fault on these cars.

Looking at the pictures at the top of the page i would say it's the second one.

The second one would indicate a mk2. I misread your post and thought you'd said it wasn't doing it on hazard lights. its worth checking for broken wires at any rate though as its something easy to check for, and doesn't require any parts to be swapped out to isolate the problem.
I have just had this problem and have been meaning to do the write up this.
It requires changing the flasher relay which is soldered into the GEM board this is inside the black box where your fuses are.
I can get some photo's for you tonight as I'm out all day.

The flasher relay is easily available on Ebay part no 512ND10WF
If your not good with soldering i'm sure someone could do it for you with the right equipment.

GEM board removed from fuse box and old relay unsoldered, this is the tricky part as you need to unsolder the 9 pins on old flasher relay

For future reference, the later (mk2) fusebox with the relays soldered onto the GEM board was also fitted to mark 1 cars from late 1998, when the electrics were heavily revised.
