Hi Juleshs,
The Ross Tech Wiki site is good because not only does it say what the codes mean but it also suggests possible causes and cures. check these pages out:-

Make a note of these codes then clear the codes see what come back after a few days as they are probably old faults

my mistake the p0191 should be p0101 maf sensor fault, could the faulty maf cause the other fault to come up too

Have you cleared these codes and the same ones came back.
What is the problem you are having with the car.

The temperature sensor is on the back of the cylinder head, see link below.

Link (https://www.fordmpv.com/smf2/ford-galaxy-reference-library/coolant-temperature-sensor-removal-(mk2-tdi-115ps)/)

Check all the wiring and multiplugs carefully as you may have some wiring issues

forgot to mention it ran even worse with new maf, couldnt get it to go above 40, also notice the revs sometime sick at just over 1000 rpm

Many cheap Maf sensors turn out to be worse than the original, I have two new ones in my garage, one from ebay and one from a factors and both make the revs unstable and hesitation.
I now have a genuine Bosch three times dearer than the other two and car runs perfectly.

The high tick over is the fault of the coolant temperature sensor replace this then refit your original MAF and try.
